Chicken Stir Fry - I make this all in a wok but if you don't have one a large saute pan will work fine.
4 Chicken breasts cut in small pieces
1 egg white
1t corn starch
1t salt
1t soy sauce
Dash pepper
Mix and refrigerate for 30 minutes.
Sliced mushrooms (small container)
2T corn starch
2T cold water
2T vegetable oil
2 cloves fine chopped garlic
1t ginger
2T vegetable oil
½c chicken broth
6 oz snow pea pods
1T oyster sauce
Mix corn starch and water, set aside.
Stir fry 2T oil, chicken mixture, garlic, and ginger until chicken is white throughout. Remove from pan.
Stir fry 2T oil & mushrooms for 1 minute. Add cooked chicken and broth. Bring to a boil then add corn starch mixture. Continue cooking until sauce is thickened. Add peas and oyster sauce and cook for 1 minute.
Serve with rice, or is great on its own.
